The discovery that vrtamin-E (Tocopherol), a component of the unsaponifiable fraction of lipids serves as a major anti-oxidant has led to repeated evaluation studies on the tocopherol content of edible oils using newer techniques ranging from chromatographic studies to simple colorlmetric analysis. The interest in vitamin-E stems from various studies that point to its role as an antioxidant that prevents the oxidation of polyunsaturated fatty acids (PUFA) and phospholipids thereby helping to maintain the integrity of cellular membranes.- Book Review

Humans have many defense mechanisms to protect themselves against mutagens and carcinogens. Among the most important defenses may be those against oxygen radicals and lipid peroxidation (LPO). LPO can be of major significance to cell injury produced by free radical mechanisms whether it precedes cell injury or occurs as a consequence of cell injury. LPO is a process in which each step may involve initiation, propagation and termination phases each of which is influenced by a wide range of factors.- Quality and Storage Stability of Crude Palm Oil and its Blends

Fat is an important component of human diet and fulfils several nutritional functions. It is a concentrated source of energy and helps to increase the caloric density of diets. It is an important source of essential fatty acids, a carrier of fat soluble vitamins and facilitates their absorption and mobilisation. Edible vegetable oils are important constituents of Indian diets. Despite the increased production of vegetable oils in the country, the gap between demand and supply has been widening due to increase in population and rise in income levels resulting in large imports mainly of palm oil. As a long term arrangement, to become self sufficient, efforts are undertaken to cultivate oil palm, the most efficient producer of edible oil/ha. About 5000 tonnes of carotenoids and vitamin E rich raw palm oil of indigenous origin find its end use only as an Industrial oil. India is one of the developing countries in which both dietary energy and vitamin A deficiencies are prevalent. This situation has led to the consideration of the possibilities of using crude palm oil as an edible oil.- Chemopreventive Action of Cynodon Dactylon (Arugampul) Extracts against Cyclophosphamide Induce Toxicity in Mice

Iron deficiency anemia is a world wide nutritional problem. The magnitude of this problem is much greater in India than in other developed countries. The Indian diets are based on cereals, pulses, greenleafy vegetables, condiments and spices. Though the grains are fairly good source of iron, the majority of Indians are suffering from iron deficiency anemia. Among the factors which leads to iron deficiency, low availability of iron is considered to be the most important. The basic information on the bioavailability of iron may be provided by the invitro methods.- Bioavailability of Iron by Invitro Method II-From Selected Foods/Diets and Effect of Processings

Iron deficiency anaemia is a chronic nutritional problem of world wide proportion. In India, among the causative factors of anaemia, dietary iron is of considerable significance. The main sources of iron in the Indian diets are cereals, pulses, vegetables, condiments and spices. Both pulses, and grains are fairly good sources of iron. The prevalence of iron deficiency anaemia therefore in the majority of Indians is paradoxical. The suggestive causes for this situation are a low availability of dietary iron apart from the iron deficiency due to infestations of gastro-intestinal tract and other diseases which either enhance or aggravate the condition.- Book Review

Surveys conducted by National Nutrition Monitoring Bureau suggested that riboflavin is one of the most limiting nutrients in Indian diets. Riboflavin intake was only 50 to 60 per cent of the recommended allowance particularly in population where rice is staple. Recent studies on dietary intake of rural school children of Hyderabad had revealed the deficiency of energy and vitamins particularly vitamin A, thiamine and riboflavin. Riboflavin deficiency in humans might lower some psychomotor performances. Prolonged B complex vitamin supplement to rural school boys of Hyderabad, could not normalise the riboflavin status in 50 percent of the children examined, but the selective psychomotor testing revealed beneficial effects of vitamin supplements on armhand steadiness test. Hence an attempt was made to find out the impact of riboflavin supplementation on growth, red cell riboflavin and arm-hand steadiness.- Calcium in Human Biology

Osteoporosis connotes bone loss of sufficient magnitude so as to result in fracture due to minimal stress. This is primarily a metabolic bone disease of ambiguous origin, marked by a progressive decline in skeletal mass without alteration in the chemical composition of bone. The predisposed areas for fractures are the spine, the head of the femur and the wrist. Osteoporosis is more common in people aged 45 years and older, and women, especially postmenopausal women.- Nutrition and Blood Pressure

Crude fibre is the fraction of a plant food remaining after the food had been boiled sequentially, first in acid and then in alkali. This measurement was introduced in the first half of the 19th century for veterinary and not human purposes and measured only part of the cellulose and part of the lignin. In 1975, Trowell introduced the term 'dietary fibre' to describe that part of plant food that traverses the small intestine and is not digested by the endogenous secretions within it.- Nutrition Immunity and Illness in the Flderly

Malnutrition interferes with a child's motivation, power of concentration and learning capacity. It results in the poor school performance of the child and low aspiration to higher education. Therefore only 40 per cent of the pupils entering the primary schools reach the fourth grade, which is the minimum to achieve lasting literacy. Thus malnutrition has become the primary cause for the huge educational waste. Hence this study was conducted to investigate the effects of malnutrition on mental abilities of selected children, five to eight years of age, in a selected rural area, and to study the changes in their mental abilities and nutritional status, after improving their diets.- Specialised Sugars for the Food Industry

The maize varieties presently cultivated in India contain 10 to 12 per cent total protein. However, the quality of their protein is poor, lacking in the essential amino acids-lysine, tryptophan and isoleucine. Hence production of a hybrid maize in which these amino acids are present in the required quantities will have a direct beneficial effect on improving human nutrition. Such an effort, made in Purdue University, U. S. A. in 1966, resulted in the opaque-2 strain of maize, rich in the amino acids, lysine and tryptophan.- An Inventory of Information on the Utilization of Unprocessed and Simply Processed Soybeans as Human Food

It reveals the state of food, uses of soybeans and information on the pattern of soybean consumption around the world. The book also identifies barriers affecting the use of soybeans as food and indicates the research needs to overcome such barriers in developing countries. There is a section in this volume, on developing methods for introducing simply processed soybeans as a direct food for low income segments of the populations of the LDC countries. Data on production and consumption of soybeans in several African and Latin American countries are also included in this inventory report.- Protein Resources and Technology:Status and Research Heads
