Abstract
Vegetable proteins which are supplied by pulses play an important role in the predominantly vegetarian diet of Indians. In recent years prices of pulses have increased manifold, making these virtually beyond the purchasing capacity of the common man. Inspite of the best efforts the production of pulses had remained static. It is therefore essential that non-conventional sources of vegetable protein should be explored to bridge the demand and supply gap.
