Natural fermentation occurs when micro organisms are allowed to react with susceptible organic substrates. Fermentation plays an important role in preservation of foods. Fermenting fruits and vegetables can bring many health benefits to the people in developing countries. The demand for fruit beverages is increasing in India due to the increasing trend towards fast foods and also to cater to the changing consumer taste. Fruit juices are deemed to be a suitable vehicle for probiotic bacteria, as they are not exposed to acidic stomach conditions for too long (resistance time is short).References

Ready to serve beverage was prepared using Fermented vegetable juices with different combination of fruit juices [10:90 (V1), 20:80 (V2) and 30:70 (V3)]. The control sample was prepared using unfermented vegetable juice and it was compared with variations over different storage periods. The prepared RTS beverage was analyzed for nutrient contents. The sensory acceptability was done every 15 days for a period of two months. The ascorbic acid content was decreased with the advancement of storage period due to its oxidation. Likewise p carotene also decreased over different storage periods. The results of organoleptic evaluation showed that the maximum score was obtained for a combination of 10:90 and 20:80.Keywords

A community based descriptive and cross sectional study was designed to assess the socio economic status, dietary pattern and nutritional status of teenage pregnant girls. This study was conducted in rural areas of Vellore and Dharmapuri districts in the state of Tamil Nadu, India. Convenient sampling method was used to select 139 subjects in their third trimester of pregnancy. Subjects who had registered in Primary Health Centers, Government Hospitals and private hospitals in these areas were selected. Information pertaining to general aspects, anthropometric measurements, nutrient intake, food taboos, special foods consumed during pregnancy was collected by direct interview method using the proforma. The data so collected was statistically analyzed. The findings suggest that most of the participants belonged to low socio economic status. Nutrient intake and anthropometric measurements of the subjects were very low when compared with standards. These results indicate low potential birth outcomes in relation to maternal nutrition.Keywords

A balanced diet has all the nutrients required in correct proportions for healthy growth and prevents the body from contacting infections and diseases. There is a wide variety in terms of food and cuisine in India and in the U.S. This pilot study examined and compared physical activity (PA), Body Mass Index (BMI), dietary intake of the subjects in Coimbatore and the Asian Indian immigrants living in San Diego (SD) and whether or not the place of living, including length of residence in SD influences these variables. Asian Indians living in America exhibit cultural differences between their place of origin and the place of living. Thirty-two participants from Coimbatore (N=17) and San Diego (N=15), both men (N=16) and women (N=16) between the age group of 20 and 60 years participated in this pilot study. All participants completed demographic information, International Physical Activity Questionnaire (IPAQ) and a single 24-hr dietary recall. One-way ANOVA was performed to determine differences in the physical activity, BMI, macro/micronutrient and calorie intake based on place of living and years of residence in SD. Descriptive statistics for demographic information and BMI was calculated. No significant differences were found between the two places of living and years of residence in SD for PA, BMI, nutrient and calorie intake (p>0.05), except for significant differences in protein (p=0.03), carbohydrate (p=0.03), calcium (p=0.048) and vitamin A (p=0.001) between the two places of living.Keywords

Obesity may be defined as a condition In which there is an excessive amount of body fat. A greater percentage of women are overweight and women bear a greater psychologicai burden with respect to the sociai pressures to be thin and social consequences of obesity. The prevalence of overweight and obesity which was 29.5 per cent and 11.1 per cent, respectively in 1995, shows significant rising trends. Glucose intolerance, dysiipidemia, hypertension and metabolic syndrome were significantly higher among the overweight and obese subjects than among normal subjects.- Effect of Zinc Rich Sesame Nutribar on the Physical Activity of Rats

Exercise is the stressor that can perturb body zinc homeostasis because it increases zinc loss and exercise is also the potent stressor that influences circulating zinc concentration in the blood affecting the physical performance of a person. Zinc added in the diets increases muscle strength and improves the endurance performance. The data on the effect of zinc supplementation in the dietary form and the endurance level of the athletes were found to be limited. The zinc supplements in the form of pills causes side effect, therefore an attempt was made to find out a dietary zinc supplement and its effect on the physical performance of rats. To find the effect of formulated sesame nutribar on the performance of the rats, 28 days supplementation protocol was carried out on a rat model. The desiccated coconut nutribar designed for the athletes containing 0.06mg (Experimental -I) and 0.08mg (Experimental-II) of dietary zinc were supplemented and a basal diet was fed to the control group (CGP) and physical training test was performed and evaluated. The rats of CGP were found to perform less in the swim test than Exp-I and Exp-II with F value being highly significant (p<0.01), thus indicating the effect of zinc present in the sesame nutribar. The data indicates the supplementation of the dietary zinc in the form of sesame nutribar improved the physical performance of the rats and thus can be used in place of elemental zinc.Keywords

Introduction: Polycystic Ovary Syndrome (PCOS) is a very heterogeneous syndrome both in its clinical presentation and laboratory manifestations. Weight loss is feasible in adolescents with PCOS and significant improvements in BMI, Waist circumference and menstrual function can be achieved. Objective: To carry out the assessment of PCOS symptoms of selected emerging adult women and to identify samples at risk of PCOS. Materials and Methods: A prospective observational design was adopted and the sampling method used in this study is a non-probability sampling technique. Study was conducted for the duration of three months from November 2013 to February 2014 and 231 emerging adult women participated in this study. A questionnaire having the details of menstrual history and features of hyperandrogenism was collected from emerging adult women. Findings: The mean, age, height, weight and the body mass index was found to be, 18.86 ± 1.4 years,156.04 ± 7.75 cms, 52.86 ± 9.7 kg and 21.60 ± 3.55 (kg/m2). 95 (41.1%) emerging adult women reported significant weight gain for the past two months. Among the total study group 87 (37.6%) emerging adult women were categorised as risk category and the rest 144 (62.3%) were not having any symptoms related to PCOS and were considered as normal emerging adult women. 24 women were having irregular menstrual cycle (22 having eight or fewer periods per year and two having more than 12 periods per year). 54 (23.3%) emerging adult women are with acne problem. Hirsutism was found among 27 (11.6%). Five (2.1%) of the subjects were having both acne and hirsutism were belonged to the risk group. Among the selected emerging adult women three percent had heavy bleeding were categorised under risk category. 48 percent of the selected emerging adult women did not do any physical activity, of them 17.7% belonged to 'at risk' category. Applications/Improvements: Based on severity of the condition, 74 subjects (32%) were categorised as risk subjects, among the total 87 emerging adult women who were predicted to have PCOS. It is preferable to follow these emerging adult women and repeat the evaluation for the exact diagnosis of PCOS.Keywords

Nutrition plays a very important role in attaining high levels of achievements in sports. Satisfactory nutrition knowledge becomes important to the practice of healthy nutrition habits and, consequently, more efficient to performance. Zinc plays a role in growth, building and repair of muscle tissue, energy production and immune status. Zinc status has been shown to directly affect thyroid hormone levels, basal metabolic rate, and protein use, which in turn can negatively affect health and physical performance. Methods -Ethical clearance was obtained from the Human Ethics Committee of PSG Institute of Medical Sciences. One hundred athletes performing various field and track events were selected (n=100) for KAP. An interview schedule was framed to conduct the study concerned with various aspects of food and nutrition by direct interview method by the investigator. Nutrition education was provided and the impact of nutrition education was found using the KAP questionnaire. Results - It was seen that the knowledge of sports person was quite low before nutrition education and had improved considerably after nutrition education as is evident.

Nutrition has an important effect on the endurance capacity and performance of sports persons. Nutritional supplements have been widely used all over the world by sports persons as it is difficult to obtain a sufficient level of nutrients from a normal diet. The objective of the study was to contribute to the scientific basis for the value of iron in sports performance. The subjects were selected by purposive random sampling technique. An interview schedule was formulated to collect base line information. Rice mix was enriched with iron and supplemented to the sports persons for a period of 90 days. The mean blood hemoglobin, mean serum iron and the transfer in saturation significantly (p<0.05) increased on supplementation. There was a significant (p<0.05) improvement in 12 minute run test after supplementation. The study concludes supplementation of iron rich foods definitely improved the biochemical and physical fitness components of the sports persons. This in turn helps to improve their endurance and performance.Keywords

Several research has indicated the increasing morbidity and mortality across the globe. Diet, lifestyle habits, stress are the most common risk factors associated with cardiovascular disease (CVD) risk. Hotel employees have been reported to have increased workload and stress which increases their risk to CVD related morbidity and mortality. This paper is a pilot study of the cross-sectional research study undertaken to identify risk factors associated with CVD risk among hotel employees in Udupi district of Karnataka. A structured questionnaire was used to elicit information pertaining to medical history, lifestyle habits, stress, sleep, bowel toxicity, inflammation and pain, blood glucose, blood lipids, diet, blood pressure and weight status. Research identified abnormal blood sugar levels, lipid profile, high blood pressure, high waist circumference and lifestyle habits like smoking and alcohol consumption as common risk factors among hotel employees. Over 69% had moderate to high risk of CVD due to the above mentioned risk factors. A good diet and lifestyle management can modify these risk factors and reduce risk of CVD among hotel employees.Keywords
