Moringa oleifera leaves have been reported to be a rich sources of vitamins especially, vitamin A and minerals. They are also an excellent source of nutrients such as vitamin C, zinc, calcium, iron and potassium and phytochemicals which have been shown to have positive health effects. The leaves can be eaten as a vegetable. The leaves cannot be stored more than a week without refrigeration due to its perishable nature. Hence, the leaves can be dried and converted into powder. The powder or dry leaves can be used to enhance the nutritional value of the foods. The present paper thus attempts to develop and standardize new innovative value added product using dried moringa leaves. Among the different drying methods studied blanched and shade dried leaves had better nutrient content. Hence the shade dried leaves were used for standardizing moringa leaf versatile food mix. It was standardized by using grains along with pulses in different variations of moringa leaves. Nutritional properties were analyzed. The standardized moringa leaf versatile food mix contains 6.5 per cent of protein, 6358μg of beta carotene and 4.2 g of iron and hence it will meet the average nutritional requirement of 20 per cent of all age groups. The versatile food mix can be stored in Metalized Poly Propylene (MPP) packages upto 6 months with significant changes in their nutritional properties.Keywords

The objective of this research paper titled Performing Colonial and Post-Colonial Parley: A Study of Athol Fugard’s Valley Song is to analyze how Athol Fugard, a South African white playwright incorporated experimental theatrical techniques not only to showcase his theatrical expertise but also to articulate his voice of protest against the socio-political power-block of apartheid that dismantles the lives of the colored population even after the end of the colonial period.

Small millets have immense health benefits as they are rich in phytochemicals and nutrients, particularly beneficial to overcome the current life style diseases. On the other hand, in India more than 50 per cent of children are malnourished. Millet based foods help to overcome these two extremes. Millet based products is economically viable and also it highlights the excellent medicinal and nutritional qualities. An attempt was made to develop millet health drink using germinated pearl millet, kodo millet and whole wheat along with pulses. The grains were soaked in water for 3 h and allowed to germinate for 24 h followed by shade dried for 10 h. The dried germinated millets were roasted until husks spilt open and then milled in a burr mill to obtain a fine flour. The flour was then blended with green gram flour, roasted bengal gram flour and skim milk powder. For the standardized health mix, DPPH scavenging activity, product properties such as bulk density, water solubility index and swelling index, proximate composition were studied and also sensory evaluation was conducted for the health drink prepared by using the standardized health mix. DPPH scavenging activity of the health mix was found to be 0.664±0.08 mg/g. Bulk density, water solubility index and swelling were calculated as 0.85 g/cm3, 9 and 1 per cent, respectively. The standardized mix had 17.08 per cent protein, 4.05 per cent fibre, 20.68 mg calcium and 7.57 mg of iron in 100 g. The drink had high consumer acceptability. The nutrient rich health drink was suitable for all groups of people. The mix can be used for preparation of different snacks like sweet ball, steamed food etc.Keywords
