Abstract
Soya has gained global recognition as a food source of immense importance to the health and well being of mankind. This is no surprise since soya represents the paradigm of a dietary source possessing excellent nutritional and prophylactic profiles. For the past two thousand years and more, the people in East Asia have been consuming traditional soya foods.
