Abstract

Winged bean (Psophocarpus tetragonolobous L.) a leguminous crop,is a source of high protein and high fat. Like most leguminous seeds, the winged bean is relatively deficient in sulphur containing amino acids and rich in lysine. Winged bean is also known to be associated with certain anti nutritional factors like protease inhibitors, haemagglutinins and saponins. Since winged bean, virtually duplicating soybean, can be grown in varied agroclimatic conditions, has attracted worldwide attention to promote it as a high protein crop.

Abstract

The tissues and plasma contain two types of non-specific phosphomonoesteraces; one exhibiting the optimum activity around pH 9 to 10 and the other around pH 5.0 and these are designated as alkaline and acid phosphatases. A number of reports are available which indicate that the levels of alkaline phosphatases may undergo changes depending upon the status of nutrition with respect to protein, fat, calcium and phosphorus.

Abstract

After the discovery of the antitryptic activity in the extracts of soybean, a large number of trypsin inhibitors have been isolated from the plant sources, especially from the leguminous seeds. Though these trypsin inhibitors have been found to be distributed in the different parts of the plant like seeds, leaves, cotyledons, ischolar_mains and stems; depending upon the plant species, they are mostly present in the seeds. As the legumes form an important part of the diet in the underdeveloped and the developing countries like India, a number of attempts have been made to improve their nutritional value by using heat treatments to destroy the trypsin inhibitor.
