The carrot is widely utilized for making salads, curries, sweets, soups, juices, flakes and pickles but carrot supplemented baby foods are hardly developed. Beetischolar_main, a good source of protein, dietary fibre, important vitamins and minerals, is rich in carbohydrates, free from cholesterol, very low in fat and rich in betaine (phytofactor).- Optimization of Process Parameters for Absorption of Moisture by Carrot Kheer Mix

Adolescence is a particularly unique dynamic period in life because it is the "second and last growth spurt" in the life of human beings. The adolescence is considered especially vulnerable nutritionally as there is an increased demand for nutrients related to the dramatic increase in physical growth and development; change of food habits affecting both nutrient intake and meals; and special nutrient needs associated with participation in sports, development of eating disorders and other situations common to adolescents. Adolescents aged between 10-19 years, account for more than 1/5th of world's population and 22.8 per cent of the Indian population.- Effect of Addition of Beetischolar_main Powder on Physical Properties and Acceptability of Defatted Soya Flour fortified Biscuits

Bajra (peart millet) is a staple food of rural people of dryland regions of India but now a days coarse cereals and millets are gaining popularity amongst those who are accustomed to softer cereals like wheat and rice because of the presence of dietary fibre, beneficial in various degenerative diseases. Insoluble fraction of dietary fibre in cereal grains contains large proportion of cellulose, which has beneficial effects in the gastrointestinal tract. The soluble fractions, which consist mainly of pectin, arabinoxylan and B-glucans has the ability to lower blood serum cholesterol, through its tendency to increase viscosity in the intestine. It was reported that rats fed bread prepared from white flour fortified with B-glucan (7% by weight) had serum cholesterol significantly lower than those fed bread from unfortified flour.- Associates of Risk Factors in ICDS and Non-ICDS 'At Risk' Underfives of Varanasi City

Protein Energy Malnutrition is probably the most important health problem in developing countries, both because of its long term effect on physical development and underlying factor in great deal of morbidity and mortality amongst pre school children. Community studies have shown that about 2 to 3 per cent pre school children suffer from clinical forms of malnutrition while a great majority have milder grades which manifest as varying degrees of growth retardation.
