Finger millet or Ragi (Eleusine coracona) is an important millet which is cultivated on a large scale in the drier parts of south India. It is also an important food crop in semiarid areas of Africa. It is less expensive than other cereals, more nutritive and is the staple food of some population in the region where it is grown. Ragi is usually converted into flour and variety of preparations including porridge are prepared from it. The grain is also malted and the flour of the malted grain is used as a nourishing food for infants and invalids.- Sensory Evaluation of Cutlets Prepared From Varying Proportions of Meat and Tixtured Vegetable Proteins

Meat IS the major supplier of protein requirements of population in affluent society. Meat proteins are more expensive than vegetable proteins. The high cost of meat and its limited supply for the ever expanding population necessitates the substitution of vegetable proteins for meat proteins. The deficiency of essential amino acids of vegetable proteins may be made good by the addition of synthetic ammo acids or by the use of proper mixture of different vegetable proteins, or vegetable proteins and cereals.- Quality Healthcare for Better Living
