Abstract
Fruits, being a rich source of vitamins, minerals, organic acids and dietary fibre, are considered as protective foods, have a special place in our daily diet. Owing to diverse agro-climatic conditions, almost all types of temperature, sub tropical and tropical fruits are grown in our country. The annual production of fruits in India is estimated to be 33.23 million tones.
