Abstract

Cereals which form the bulk of Indian vegetarian diets, are known to be deficient in one or more essential amino acids and hence are far from being adequate protein sources. However, by supplementation with other proteins, it is possible to improve the nutritive quality of cereals.

Abstract

Quality of dietary proteins, among other things, greatly influences the regeneration of proteins from various tissues. Essential amino acid make up of (he proteins determines its nutritive quality and hence the importance of supplementation of a dietary protein deficient in one or more essential amino acids with another source which is rich in these amino acids.
