Abstract

Exercise is accompanied by an elevated metabolic rate, which increases oxygen consumption in the celis leading to production of deleterious species such as reactive oxygen species (ROS) and free radicals (FR). The formation of ROS and FRs is directly related to the intensity and duration of exercise and these elicit a series of chemical reactions resulting in peroxidation of lipids and proteins which is potentially harmful as it disrupts cell membranes and cellular components. These disturbances of intracellular pro-oxidant, antioxidant homeostasis is known as oxidative stress.

Whey is the by product obtained during transformation of milk into coagulated products like channa, cheese and paneer. Modern Membrane Technologies in vogue help in economical retrieval of proteins as whey protein concentrates which have good solubility, low viscosity and possess foaming, emulsifying, gelling and water binding properties.
