The high incidence of nutritional problems among weaned infants and young children call for effective steps to improve the nutrient content and quality of the Indian diets. Recently, faba bean (Vicia faba L.) has been positively considered as a noval leguminous protein source by the nutrition experts as a substitute after soybean products to meet the challenge of malnutrition in developing countries.

Biochemical compositional variations were indicated among mushroom of the same species (Pleurotus florida) when cultivated on four variable straw substrates. Reports on the relative biochemical constituents of fruit body of P. florido indicated compositional variations among these mushrooms when cultivated on variable straw substrates viz, paddy, wheat, soybean and a mixture of them. Protein content ranged from 20 to 24 per cent with varying concentration of all the essential amino acids and minerals. Horsegram (Dollchos biflorus L), a leguminous seed of high protein content with a remarkable level of lysine and minerals, has been identified as one of the potential food sources by the National Academy of Sciences of the United States of America. In recent years, mushroonns are being projected as a potent protein food source, rich in essential amino acids and minerals. An assessment on their functional properties has also confirmed their acceptability as a food source. Following feeding on mushroom diet, plasma proteins tend to be increased. However, a very limited data is available on the quantitative or qualitative changes in the protein pattern after mushroom diet as resolved by gel electrophoresis. Changes in the protein pattern during the development of fruit body of Calocybe indica has also been reported. The present study was therefore, designed to investigate the changes in the components of blood proteins of growing rats electrophoretically after a low or high mushroom diet.
