Abstract

In recent years, consumption of carrot and its related products has increased steadily due to the recognition of antioxidant and anticancer activities of β-carotene in carrot. The carrot is widely utilized for making salads, curries, sweets, soups, juices, flakes and pickles but carrot supplemented baby foods are hardly developed. Beetischolar_main, a good source of protein, dietary fibre, important vitamins and minerals, is rich in carbohydrates, free from cholesterol, very low in fat and rich in betaine (phytofactor).

Carrot (Daucus carota L.) is one of the nutritious ischolar_main vegetables, rich in carotenoids. These are processed into various products such as dehydrated carrots, carrot juice, beverages, candy, preserves, canned carrots, halwa etc. Fresh carrot (g/100g) contains about 86 moisture, 0.9 protein, 0.2 fat, 1.1 total minerals, 1.2 crude fibre, 10.6 carbohydrates, 48 Kcal of calories, 0.08 calcium, 0.53 phosphorus and 0.00103 iron.

Abstract

Bajra (peart millet) is a staple food of rural people of dryland regions of India but now a days coarse cereals and millets are gaining popularity amongst those who are accustomed to softer cereals like wheat and rice because of the presence of dietary fibre, beneficial in various degenerative diseases. Insoluble fraction of dietary fibre in cereal grains contains large proportion of cellulose, which has beneficial effects in the gastrointestinal tract. The soluble fractions, which consist mainly of pectin, arabinoxylan and B-glucans has the ability to lower blood serum cholesterol, through its tendency to increase viscosity in the intestine. It was reported that rats fed bread prepared from white flour fortified with B-glucan (7% by weight) had serum cholesterol significantly lower than those fed bread from unfortified flour.

Abstract

Protein Energy Malnutrition is probably the most important health problem in developing countries, both because of its long term effect on physical development and underlying factor in great deal of morbidity and mortality amongst pre school children. Community studies have shown that about 2 to 3 per cent pre school children suffer from clinical forms of malnutrition while a great majority have milder grades which manifest as varying degrees of growth retardation.
