In India, where most of the people are vegetarians, the role of vegetables in the dietary is of great importance. They are considered to be rich sources of vitamins, proteins and minerals including trace minerals. There seems to be an acute shortage of vegetables in this country, specially at this juncture when the population is growing fast. It will be highly desirable to find out cheap and easily available substitutes for the common seasonal vegetables.
